Ingredients
- (3-4 lb) Chuck Roast
 - (2 tbsp) Olive Oil
 - 1 Large Onion (Chopped)
 - 4 Cloves Garlic (Minced)
 - 4 Potatoes, Peeled and Cut into Large Chunks
 - 4 Carrots, Peeled and Cut into Large Chunks
 - (2 cups) Beef Broth
 - (2 cups) Red Wine (Optional)
 - 2 Sprigs Fresh Rosemary
 - 2 Sprigs Fresh Thyme
 - Salt and Pepper
 
Directions
1. Preheat Oven:
Preheat your oven to 325°F (160°C).
2. Season and Sear:
- Season the chuck roast generously with salt and pepper on all sides.
 - Heat the olive oil in a large oven-safe pot over medium-high heat.
 - Sear the roast on all sides until browned, about 3-4 minutes per side.
 - Remove the roast from the pot and set it aside.
 
3. Sauté Vegetables:
- Add the chopped onion and garlic to the pot.
 - Cook until softened, about 5 minutes.
 
4. Deglaze the Pot:
- Pour in the red wine (if using) and beef broth to deglaze the pot, scraping up any browned bits from the bottom.
 
5. Add the Vegetables:
- Place the carrots and potatoes around the roast in the pot.
 - Add the rosemary and thyme sprigs on top.
 
6. Braise:
- Cover the pot with a lid and transfer it to the preheated oven.
 - Cook for 3-4 hours, or until the meat is tender and falls apart easily.
 
7. Serve:
- Remove the roast from the oven and let it rest for a few minutes before slicing.
 - Serve the roast with the cooked vegetables and a drizzle of the pan juices.
