  • 4 Cloves Garlic (Minced)
  • 4 Potatoes, Peeled and Cut into Large Chunks
  • 4 Carrots, Peeled and Cut into Large Chunks
  • (2 cups) Beef Broth
  • (2 cups) Red Wine (Optional)
  • 2 Sprigs Fresh Rosemary
  • 2 Sprigs Fresh Thyme
  • Salt and Pepper

Directions

1. Preheat Oven:

Preheat your oven to 325°F (160°C).

2. Season and Sear:

  • Season the chuck roast generously with salt and pepper on all sides.
  • Heat the olive oil in a large oven-safe pot over medium-high heat.
  • Sear the roast on all sides until browned, about 3-4 minutes per side.
  • Remove the roast from the pot and set it aside.

3. Sauté Vegetables:

  • Add the chopped onion and garlic to the pot.
  • Cook until softened, about 5 minutes.

4. Deglaze the Pot:

  • Pour in the red wine (if using) and beef broth to deglaze the pot, scraping up any browned bits from the bottom.

5. Add the Vegetables:

  • Place the carrots and potatoes around the roast in the pot.
  • Add the rosemary and thyme sprigs on top.

6. Braise:

  • Cover the pot with a lid and transfer it to the preheated oven.
  • Cook for 3-4 hours, or until the meat is tender and falls apart easily.

7. Serve:

  • Remove the roast from the oven and let it rest for a few minutes before slicing.
  • Serve the roast with the cooked vegetables and a drizzle of the pan juices.
